Lately, I have really been craving chocolate, but something that is more of a dessert than just plain chocolate. Luckily for me, a friend posted a recipe on her facebook page that I found really interesting – I followed the link to see if I could substitute some ingredients to make a Gluten Free version of it; I was able to find one already converted. This is really good, fast and easy to make when you are craving something chocolaty.

Gluten-free Two Minute Mug Brownie

!/4 cup quinoa flour [can substitute reg flour if not GF}

1/8 cup packed brown sugar

2 Tbsp unsweetened cocoa powder

2 Tbsp coconut oil -melted

2 Tbsp milk,

In a heatproof mug or ramekin, stir together the dry ingredients until no lumps remain. Stir in the oil and milk until you have a thick paste.

Microwave on high for a minute, checking it after 30 seconds (microwaves vary) — it will be done when it’s springy on top but still a bit gooey, careful you don’t burn the sugar! Like the very best brownie. Eat warm.

So fast and easy especially when you have a late night chocolate craving, enjoy!
